Thai Sweet Potato Soup

Ingredients

  • Water - 24 oz / 700 ml

  • Sweet Potatoes - 2-3

  • Shallot - 2

  • Coconut Milk Powder - 1/4 C / 20 g

  • Ginger, Powdered - 1 TB / 5 g

  • Salt - 1 tsp / 5 g

  • Lime - 1

Steps

1. Chop sweet potatoes
2. TURN ON BURNER: HIGH HEAT
3. Add water, sweet potatoes, shallot, ginger, coconut milk powder, salt until soft. 5-10 min
4. Mash sweet potatoes
5. Garnish w/ lime wedge
