Shiitake Sesame Ramen

Ingredients

  • Miso Paste - 2 TB / 25 g

  • Soy Sauce - 1/4 C / 50 g

  • Rice Vinegar - 2 TB / 25 g

  • Sesame Oil - 2 TB / 25 g

  • Water - 16 oz / 475 ml

  • Shitake Mushrooms, dried - 1/4 C / 10 g

  • Ramen Noodles - 10-12 oz / 300 g

  • Green Onions - 1/2 bunch

  • Snap Peas - 1/2 C

  • *Optional * Eggs, hard boiled 4-8

Steps

1. Add miso paste, soy sauce, rice vinegar, sesame oil, water, shitakes in pot
2. TURN ON BURNER: HIGH HEAT
3. Boil. Simmer 2-3 min
4. Chop green onions
5. Add noodles
6. Cook until almost done
7. Add snap peas
8. Garnish w/ green onions and broken eggs
