Kashmir Chickpea Stew

Ingredients

  • Olive Oil - 2 TB / 25 g

  • Shallot - 2

  • Cauliflower, small head - 1

  • Carrot - 1

  • Garlic - 3 cloves

  • Chickpeas - 2 can (31oz / 880g)

  • Curry Powder - 2 TB / 15 g

  • Lemon - 1

  • Salt - 1 tsp / 5 g

Steps

1. Chop onion, cauliflower, carrot, garlic
2. Open cans
3. TURN ON BURNER: HIGH HEAT
4. Add olive oil, shallot, cauli, carrot, salt, curry pwdr
5. Cook 3 min
6. Simmer 5-7 min until veggies done
7. thin out with water as needed
8. Garnish w/ lemon wedges
